It is common knowledge that the best grass fed beef has to come off the best pasture. Just look at how lush the grass is! Jeff Rosenkrans and his father before him have been raising cattle as a sideline to their primary business which is hay farming!. For some reason the finger lakes region in North Central New York has a unique "terroir" . The intensity of flavor found in the grass makes it way into the flavor of the beef. The Rosenkrans sell their hay as far afield as Kentucky and Florida. We have never seen field so lush. Only 80 cattle are available annually so we take the whole carcass and break it down into quarters which we divide into the major muscles.
