Peel and shred potatoes. Place in a clean kitchen towel and squeeze any moisture out. Combine remaining ingredients in a large bowl and mix together. Add potatoes and mix thoroughly. Heat oil to med high in a large skillet. Form potato mixture into small pancakes and fry each side until golden. Remove from skillet and rest on paper towel.
Serve hot with crème fraiche and apple sauce
Preheat oven to 350. Prepare a rectangle baking dish by coating all sides with butter. Pour uncooked noodles in to pan and sprinkle raisins over noodles. In a bowl, whisk together eggs, crème fraiche, butter, and sugar. Once mixture is smooth, whisk in milk. Pour over noodles and let sit for 10 minutes. Place in oven and bake until kugel is set in the center. This will take about one hour. Cut in to squares and serve.
Preheat oven to 325. Place chopped onions, and celery, canned tomatoes, red wine and thyme in the bottom of a heavy roasting pan. Season brisket with salt, pepper, and garlic. In a large skillet, sear all sides of the meat. Place on top of mire poix in roasting pan, fat side up. Cover with foil and cook for 3 hours. Remove foil, add carrots and cook for an additional 30 minutes. Remove brisket from roasting pan and strain all remaining liquid through a china cap. Place liquid in a sauce pan and reduce, season with salt and pepper. Slice brisket and serve with sauce.
