All great kitchens have giant stock pots simmering at all hours to produce just this, Glace de Veau, reduced veal stock. A simple stock gives flavor and structure to any sauce recipe. Just deglaze your pan with wine, add a couple of tablespoons of Veal Glace, a swirl of butter and you have it.
