Description
Bring your rib roast to room temperature (remove from the refrigerator and let sit for two hours).
Pre-heat the oven to 550 degrees (or as hot as you can). Mix together 3 parts of dried thyme to 1 part dried rosemary and 1 part minced fresh garlic, with 1 part salt and a half a part pepper. Add enough olive oil to the spice blend so that it will easily spread all over this meat. Place roast in pan and put the roast in the center of the oven, and reduce oven temperature to 325. Roast until you reach an internal temperature of 125 degrees (check roast after one hour and 15 minutes). Let rest 10 to 30 minutes before carving, to allow juices to re-distribute.
