Once in a Lifetime...Very late review, bought this back in 2021 to celebrate a house warming, and there are almost not any words to describe how great it was. Starting as always with DeBragga: I mention it on every review I do, their customer service is superb. I ordered these to Dallas and they helped coordinate when the order experience a delay and worked with Fedex to have me pick it up during off-hours from a major hub. To the steak itself, it is the highest grade you can get for Wagyu and then some. The grading process for Wagyu is on a scale of 1 to 5, with 5 being the best (which this selection is). However, there is another component of Beef Marbling Score and A5 runs from 8-to-12. The tenderloin I received was a BMS-12 from all the research I did. Absolutely crazy amount of marbling. Wagyu is in a realm of its own, and doesn't need much in the way of seasoning and definitely doesn't need extra fats (butter, ghee, oil, tahini, etc.) for cooking. We did these authentic Japenese breakfast style and cut into skinny medallions with eggs and noodles, just add coarse salt and wasabi to it. We cut one half into 8oz Filets and sous-vide them to 131 and seared with a torch. The other half we grilled whole wrapped in aluminum foil for half of the cook until 100 and took it to 128 on a gas grill and rested. Every single way was as succulent, rich, and just all out amazing as you can get. This will feed a party of 15 for several meals, just need to get creative. If you are not used to the fattiness, ensure there is proper "facilities" available as you'll do some damage in that department too!
