Pork Butt Leftovers: Jamaican Jerk Pork Soup

Ingredients
- 2T butter
- 2T olive oil
- 1 med Vidalia onion, diced
- 2 cubanelle peppers or seasoning peppers, diced
- 2 scotch bonnet peppers, seeded and chopped
- 4 cloves garlic
- 2T Jamaican Jerk Seasoning
- 2 med unpeeled Sweet Potatoes, diced
- 4 cups chicken stock
Directions
- In a large pot, heat the butter and olive oil until sizzling
- Add onion, peppers, garlic, and saute on low until the onion softens.
- Stir in Jerk Seasoning and the sweet potatoes
- Let saute for 5 minutes
- Add chicken stock and pork
- Simmer until potatoes are cooked
