The DeBragga BLT
The classic, our way, features our own smoked, uncured bacon.- Prep Time 1 Hour
- Cook Time 20 Minutes
Ingredients
- Gloucester Old Spot Smoked Uncured Bacon, fried or baked
- Crunchy, herbed Slaw (see recipe below)
- Tomato Jam (see recipe below)
Directions
For the slaw, mix all in a bowl:

2 cups finely shredded & chopped savoy cabbage

2 tsp each finely chopped dill & parsley
- ¼ cup each mayo and sour cream

Generous grind of Tan Hoi Black Pepper
For the tomato jam:

Cut an x on the bottoms of 4 ripe tomatoes and drop into boiling water for 2 minutes. Plunge immediately into an ice water bath and peel.

Drain. Squeeze out most of the seeds and chop tomatoes coarsely.

Simmer in a pot with ¼ cup sugar and allow to cook down slowly until the tomatoes are jammy.

Store in fridge.
Assembly:

Spoon tomato jam on the bottom slice of rye

Top with bacon

Top with crunchy herby slaw

Top with another slice of rye
