Watercress Dijon Salad
A fun spin on your summer salads.- Prep Time 10 minutes

Ingredients
For the Salad:
3T olive oil
2 t Kosher salt
2 t Black pepper
2 bunches of watercress, picked over and hand torn
3 mini cucumbers, sliced on the bias
2 plum tomatoes, diced
Handful of roasted, slivered almonds (or whatever nuts you have)
For the Vinaigrette:
¼ c olive oil
2 medium garlic cloves
2 T good Dijon mustard
2 T white balsamic vinegar
4 T fresh lemon juice
Directions:

Put your salad into a large bowl.

Blend your vinaigrette with a whisk or immersion stick.

Toss it all together.
